Well, this is a post to say goodbye to The Kitchen Series...<br />
Writing and sharing my kitchen experiences with you has been one of the most awesome things I've done, it's been great and I have really enjoyed it. It has been a really wonderful amazing ride :)<br />
<br />
This is not a goodbye to the whole foodblog thing it's a goodbye to this particular blog and an invitation to go visit the new one I'm working on.<br />
I do hope that whoever enjoyed this blog gives the new one a chance. It's going to be awesome. I swear I will post more often and shower you with new recipes. I know I say this often and ya'll probably don't believe anymore, but it's true. It's a new concept, a new start and hopefully you'll enjoy it as much as I will.

This new blog is called <a href="http://thekitchenseriesii.blogspot.mx/">The Kitchen Series II . Diaries of Me</a> it's gonna be more about life in general with a lot of food thrown in the mix. I want to write about my life and friends and shit that happens as well as food and not just write recipes. I mean, I will be sharing recipes (otherwise naming it The Kitchen Series II would be stupid) but I will be sharing other stuff with you too.<br />

So give it a go. I really really hope to see your comments there. And, I guess that's all.<br />

</span></div><div class="separator" style="clear: both; text-align: center;"><span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">The chicken was marinated in gourmet mustard, honey, olive and garlic oil, salt and pepper and mustard seeds mix. Before being cooked on a skillet until each side was slightly browned. </span></div><div class="separator" style="clear: both; text-align: center;"><span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">I added a hell of a lot more cheese than what the recipe called for on the Dauphinoise but, cheese is good. When this all began I was pretty sure I wasn't going to get through with it. </div><div style="text-align: center;">I have landed an awesome job... that I do for free... </div><div style="text-align: center;">I guess you could call it a kind of Social Service that needs to be done so I can get my diploma from my cooking lessons, that are in reality a sort of Associates Degree kind of thing. </div><div style="text-align: center;">Anyway... I landed an awesome job at this really nice, beautiful, really fun place called: La Estacion, Comida de Mercado. </div><div style="text-align: center;">Now if you go back a few posts to January, you'll find that I spent New Years Eve at this same restaurant and that I fell in love with it, and surprise surprise I work there now! </div><div style="text-align: center;">And I L O V E it! </div><div style="text-align: center;">And even though I am the only girl, female, working there and it gets a little uncomfortable at times. I just love it. Mixed them all together until I got a sandy-like appearance. Stuffed it in the fridge for an hour. </div><div style="text-align: center;"><br />

Sore throat, runny nose, cough, you know. In my case, Season's 6 finale of Greys Anatomy. </div><div style="text-align: center;">I know, some of you, like my father will be all like: EWWW</div><div style="text-align: center;">But we all know that that's not real blood! </div><div style="text-align: center;">Plus, I've been watching this kind of shows since I was really young so I guess you could say I am used to it. </div><div style="text-align: center;"><br />
</div><div style="text-align: center;">Haha I just realized that I named my post HEARTY meal and ironically enough the episode I'm watching is when Derek gets shot on the chest. </div><div style="text-align: center;"><br />
</div><div style="text-align: center;">Okay so anyway, my meal of the day consisted on this really nice Aglioli Pasta with some tomato-honey chicken. </div><div style="text-align: center;">Sounds weird, when I say it and you read it like that. But please oh please trust me when I say it was ultra delicious. </div><div style="text-align: center;"><br />
</div><div style="text-align: center;">For the pasta you just need some Spagetti, Olive Oil, Garlic, and about 50ml of the cooking water. </div><div style="text-align: center;">For the Chicken you need: Chicken Breast cut into long slices (like for a chicken tender), a couple of dry tomatoes, Olive Oil, A clove of garlic and runny honey. </div><div style="text-align: center;"><br />
</div><div style="text-align: center;">So you put your water to cook the pasta and wait until it boils. </div><div style="text-align: center;">Meanwhile, cut your tomato and your garlic (for the chicken) really thinly and small and add a little bit of olive oil, salt and ground pepper, and crunch it all up together with your hands. </div><div style="text-align: center;">Next, add a pinch of salt to the water before adding your pasta. </div><div style="text-align: center;">While your pasta cooks, rub your chicken on your tomato mixture and roll them up and pin it together so you have a roll with a tooth pick. </div><div style="text-align: center;">Place a pan in medium heat add a little bit of olive oil and wait for it to heat up. </div><div style="text-align: center;">I suppose, that your pasta should be done by now, so drain it but save some of the cooking water. </div><div style="text-align: center;">Next add a nice drizzle of olive oil to another pan and heat it, add the garlic (which should be finely sliced) and wait for it to get some nice colour and when it does add your pasta, season, and toss it around the pan. Have a taste. </div><div style="text-align: center;">Now add your chicken to the pan and cook it, it should take around 8 minutes (if your slices are thin like mine) while they are cooking add the honey, around a table spoon on each of your rolls. </div><div style="text-align: center;">Turn them over and add some more honey on the other side. </div><div style="text-align: center;">When your chicken is done, serve it over your pasta, turn on the TV and the DVD and pop in your favourite series finale and enjoy yourself. </div><div style="text-align: center;"><br />

But I made this for my baby sister because she is under a lot of stress because she's in examinations week. Which we all know, is quite stressing. So I wanted her to at least forget for one tiny moment about the examinations and delight herself with some good old home cooking. </div><div class="separator" style="clear: both; text-align: center;">And the dough was a combination of me, Jamie Oliver <3 and school. And it turned out quite good. </div><div class="separator" style="clear: both; text-align: center;">This pasta is so fragrant I swear someone ought to make a perfume with it! It is sweet and tangy and lemony and tomato-ish. It's exquisite. I really-really loved it. </div><div class="separator" style="clear: both; text-align: center;">It is so good that my boyfriend who is at war with all this healthy (especially veggies!) liked it! </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">At my cooking lessons I've had two chefs, one of them, who we will call Chef J is all about styling dishes in a sort of minimalistic way. The other one, Chef Louis, likes things in a more rustic way. </div><div class="separator" style="clear: both; text-align: center;">Now I like both.</div><div class="separator" style="clear: both; text-align: center;">However, I do think this pasta is so rustic and beautiful it's a perfect dish for a family reunion. It is so full of colour and flavour and simple joy! It is amazing! I used about 1 1/2 of flour and a Larger bottle. </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">And you work the magic like so: </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">1. First you heat up your oil so you can blanch your potatoes. And fry your potatoes (which should already be cut into fries) for about 8-10 minutes depending on their size, until softened but NOT coloured. </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">2. Meanwhile season your fish fillets with a bit of salt and pepper and dust lightly with little flour. </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">3. Make the thick batter by sieving the flour into a bowl with a little salt and whisking in most of the lager. The book says it should be as thick as double cream, mine wasn't that thick but it worked pretty well... </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">4. Now dip one fish fillet in the batter and make sure it is evenly covered and very carefully place the fish in the hot oil, then repeat with the others. Cook for 8 to 10 minutes depending on the thickness of your fish and halfway through cooking time turn the fillet over. When it is done remove fish from saucepan and keep it warm. </div><div class="separator" style="clear: both; text-align: center;"><br />

I am a tiny bit sad... someone said something to me on the last few days that really pissed me off. </div><div style="text-align: center;">Remember I was taking cooking lessons? Well, I still am. But I don't know, somehow cooking during my lessons I don't feel all that excited than when I cook at home. </div><div style="text-align: center;">I narrowed it down to the fact that my instructors don't really give me much to be excited about... nothing I do is completely right, there is always something wrong. ALWAYS. And okay fine. I am not a chef, and I am not so completely arrogant to believe that everything I cook is ultra delicious and perfect. </div><div style="text-align: center;">BUT I would appreciate a pat on the back every now and again. </div><div style="text-align: center;">And a little bit of excitement from their part as well. They seem bored... somehow... </div><div style="text-align: center;">I know that the last two posts have been of dishes I have styled while at school. And in both of them I have said that normally I am not proud of most things I made expect for these small exceptions.</div><div style="text-align: center;">And maybe I am wrong, maybe the reason I don't feel proud of most that I do there is because, well, one I don't get a good old pat on the back and two there aren't things I am excited to cook. </div><div style="text-align: center;">Normally, I see a recipe fall in love with it and try it out. </div><div style="text-align: center;">In my lessons we get a recipe assigned and then we do it.</div><div style="text-align: center;"><br />

</div><div style="text-align: center;">First off, I didn't add eggs (2 eggs) not because I didn't want to, but because I forgot! </div><div style="text-align: center;">This didn't seem to disrupt the recipe nor the taste. </div><div style="text-align: center;">Second thing I changed was the time I allowed the dough to rise, which was less than an hour... </div><div style="text-align: center;">And I added a little more time for the second rise (about 15 minutes)</div><div style="text-align: center;">For the frosting I reduced the time of beating, because I just couldn't wait to try them! And well, the reason for that is that it's too hard to find sometimes. You have to know where to look, and isn't it great that I now know? </div><div class="separator" style="clear: both; text-align: center;">I'll be making a post of my every once in a while visits to Mexico's food jackpot. </div><div class="separator" style="clear: both; text-align: center;">El Mercado de San Juan. </div><div class="separator" style="clear: both; text-align: center;">You'll find everything there, from all sorts of meat to Rhubarb! Or Butternut squash! And this really really exquisite parmaham tortitas...</div><div class="separator" style="clear: both; text-align: center;">You know, the sort of things you don't get from your regular supermarket. </div><div class="separator" style="clear: both; text-align: center;">Okay Okay enough talk, lets head to the recipe!</div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">Rhubarb Galette. </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">First you need to make your Cornmeal Pate Brisee (which is just fancy words for Ultradelicious crust!)</div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">2 cups of all-purpose flour. </div><div class="separator" style="clear: both; text-align: center;">1/2 cup of cornmeal. </div><div class="separator" style="clear: both; text-align: center;">1 teaspoon of salt. </div><div class="separator" style="clear: both; text-align: center;">about three tablespoons of sugar.</div><div class="separator" style="clear: both; text-align: center;">2 sticks of unsalted butter. </div><div class="separator" style="clear: both; text-align: center;">1/4 to 1/2 of ice water. </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">Okay so put the flour, the cornmeal, salt and sugar in and mix until combined. </div><div class="separator" style="clear: both; text-align: center;">Add the butter and mix it until it resembles a coarse meal. </div><div class="separator" style="clear: both; text-align: center;">With your mixing machine running add the ice water just until the dough holds.</div><div class="separator" style="clear: both; text-align: center;">Turn the dough in a clean surface and wrap the dough with cling film. Flatten them to form a disk. </div><div class="separator" style="clear: both; text-align: center;">Refrigerate for an hour up to a day before you use them. </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">Rhubarb Galette. </div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">1/4 cup of all purpose flour, plus more for work surface. </div><div class="separator" style="clear: both; text-align: center;">1/2 recipe Cornmeal Pate Brisee</div><div class="separator" style="clear: both; text-align: center;">1 pound of Rhubarb, sliced. </div><div class="separator" style="clear: both; text-align: center;">Juice of half a lemon. </div><div class="separator" style="clear: both; text-align: center;">1/4 cup granulated sugar. </div><div class="separator" style="clear: both; text-align: center;">Pinch of salt. </div><div class="separator" style="clear: both; text-align: center;">Pinch of Ground Cinnamon. </div><div class="separator" style="clear: both; text-align: center;">One freshly ground nutmeg. </div><div class="separator" style="clear: both; text-align: center;"><br />

</div><div class="separator" style="clear: both; text-align: center;">Preheat oven to 375 degree. </div><div class="separator" style="clear: both; text-align: center;">In a lightly floured surface roll the dough into a disk. </div><div class="separator" style="clear: both; text-align: center;">Next work the Rhubarb... </div><div class="separator" style="clear: both; text-align: center;">Place it a bowl the rhubarb and add the lemon juice and toss to combine. </div><div class="separator" style="clear: both; text-align: center;">In a medium bowl whisk together the flour, sugar, salt, cinnamon and nutmeg until well combined. </div><div class="separator" style="clear: both; text-align: center;">Add the sugar mixture to the rhubarb and toss until well coated. </div><div class="separator" style="clear: both; text-align: center;">Then add the Rhubarb to the pastry, place it right in the middle. Remember the Galette is a really rustic kind of pie/tart so don't worry if it doesn't look stylish. </div><div class="separator" style="clear: both; text-align: center;">Once you place the Rhubarb in the middle of the pastry fold fold the borders, overlapping when necessary. </div><div class="separator" style="clear: both; text-align: center;">Transfer to fridge for 20 minutes. </div><div class="separator" style="clear: both; text-align: center;">Bake for 60-55 minutes. </div><div class="separator" style="clear: both; text-align: center;"><br />
